    Track/Slot Operations: Cashier

    The Cage Cashier is responsible for the redemption of Slots/Mutuels tickets/vouchers, redemption of chips, performing Check Cashing/Cash Advance transactions for guests and assuring that guest have a favorable gaming experience

    SPECIFIC DUTIES AND RESPONSIBILITIES

    • Responsible for cashing customers out, giving correct change, and answering customer questions in a courteous and professional manner.

    • Responsible for accurately counting and recording assigned funds and making exchanges of funds throughout the shift.  Assuring that guests have a favorable gaming experience.

    • Keeping cash drawer balanced and impressed.  Making exchanges with vault.

    • Verifying and documenting personal identification information for check and cash advance transactions.

    • Completing CTRs, W2Gs, and MTLs.

    • Responsible for customer relations.  Ensure safety and security of employees and customers.

    • Fill-in as a Main Banker when necessary (refer to Main Banker’s Job Compendium)

    Track/Slot Operations: Chef/Cook
    Cook II PM Shift - Calder Casino (Miami Gardens, FL)

    The Cook II is responsible for safely preparing food items, following menu specifications and standard recipes, for service to guest in all outlets.

    SPECIFIC DUTIES AND RESPONSIBILITIES

    • Ability to operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and griddles.
    • Requires reading and math skill for recipes and measurements.
    • Ability to read, write, speak and understand basic English in order to read receipts and communicate with other team members.
    • Actively participates with staff to cook, prepare, dish-up and assemble all outlets food.
    • Adheres to control procedure for food costs and quality.
    • To encourage and abide by all health codes and hand washing guidelines.
    • Prepares all food items according to standard recipes and menu to ensure consistency of product to the guest.
    • Be able to create compound sauces and derivatives of the mother sauces including the knowledge of Beurre Blancs.
    • Prepare written food requisition for supplies and food items for production in the work station.

    The Heavy Duty Steward is responsible for the successful operation of non-cooking activities such as dishwashing, silver cleaning, equipment cleaning, and overall kitchen cleanliness.  

    SPECIFIC DUTIES AND RESPONSIBILITIES

    • Responsible for cleaning kitchen work areas and restaurant equipment by sweeping and mopping floors, washing work tables, walls, refrigerators, stoves, steamers, and meat blocks.       

    • Responsible for removing trash, cleaning trash cans, washing dishes by hand or in the dishwasher, and cleaning mats and vents with a steamer.  

    • Responsible for taking inventory of china, silverware, and glassware, and reporting any shortages to management, while devising methods of guarding against theft and waste.

    • Responsible for reporting any maintenance required for kitchen areas, and ordering parts for defective equipment.                                                                                                                                                                                                                                                                                    

    • Ensure the safety and security of employees and guests.

    • Lift over 50 lbs.

    IT Director - Calder Casino & Race Course (Miami Gardens, FL)

    The Director of IT is responsible for the successful operation of the IT department, managing all aspects of the site’s computer and telephone systems inclusive of the mainframe, personal computers, and the respective networks, hardware, and software.      

    SPECIFIC DUTIES AND RESPONSIBILITIES

    • Develops and manages the budget for IT.

    • Interfacing with other departments in planning, recommendations, assisting with needs, and implementing computer and telephone hardware/software systems, and programs.

    • Maintaining the integrity of casino operational computer and telephone systems.  Documentation of systems and procedures.

    • Responsible for and the maintenance of access codes and other data-related security controls used to ensure authorized access to computers and the system-wide reliability of data.

    • Responsible for computer tapes, disks, or other electronic storage media containing data relevant to gaming facility operations.

    • Responsible for computer hardware, communications equipment and software used in the conduct of gaming facility operations.

    • Review staffing levels to maintain budgeted employment.  Delegate authority and assign responsibilities.

    • Developing of staff, interviews, hires, and evaluates.

    • Review IT activities with President/General Manager.

    • Meets with departmental managers and directors as necessary.
